Chocolate Tiramisu Recipe

Due to it being the hubby's birthday, he requested Tiramisu and as I'm a lover of chocolate I couldn't resist this recipe.



Ingredients

3 Free Range Large Egg Yolks plus 2 extra egg whites
50g Caster Sugar
250g Tub Mascarpone 
24-30 Sponge Fingers
150ml Very Strong Coffee
3 Tablespoons Dark Rum (Optional but tasty!)
50g -100g 70%+ Dark Chocolate grated/finely chopped
1 Tbsp Cocoa Powder

Makes 4-6 Portions depending on how much you want!

I served this in a 30cm square Pyrex dish but you can do individual portions in tall glasses (if you wanna be posh!)

Instructions
 
First put the egg yolks into a medium-sized bowl together with the sugar and beat with an electric hand whisk on high speed for about 3 minutes, or until the mixture forms a light, pale mousse. In a separate large bowl, stir the mascarpone with a wooden spoon to soften it, then gradually beat in the egg yolk mixture. Between each addition, beat well until the mixture is smooth before adding more. 

Now wash and dry the beaters of the whisk so they are perfectly clean, then in a third separate bowl whisk the egg whites until they form soft peaks. Now lightly fold this into the mascarpone mixture and then put the bowl to one side.

Next, break the biscuits in half, then pour the coffee and rum into a shallow dish and then dip the sponge fingers briefly into it, turning them over – they will absorb the liquid very quickly.
Now simply layer the desserts by putting soaked sponge  as one layer, followed by a layer of mascarpone mixture and a layer of chopped chocolate. 

Repeat the whole process, finishing with a layer of chopped chocolate and a final dusting of cocoa powder. 

Cover with clingfilm then chill in the refrigerator for several hours and serve straight from the fridge

A little fiddley and a lot of bowls!
COST (1 Cheap-5 Expensive)- 
I had to buy the rum (much cheaper if you already have rum)
TASTE (1 Yuck - 5 Yum) - 
The best Tiramisu we have tasted - so far
