Theres nothing like a good breakfast to set you up for the day and Vegetarian Week this week has highlighted a whole range of delicious ways to make the morning go with a swing.
Breakfast is something of a speciality at the Pot Cafe in Crwys Road, Cathays, Cardiff where owner Natalie Eddins often adds Parisienne and American touches to Welsh favourites.
Natalie, who caters for bacon lovers too, reveals that more than 50% of her customers choose a meat-free breakfast whether they’re vegetarian or not.
“There are so many lovely things you can do without using any meat,” she said.
She picked up many of her ideas during a spell working as a French speaker in a hotel in San Francisco. “I found the cornbread recipe here in a cafe in San Francisco but I’ve adapted it,” she confessed. “I loved their whole approach to cooking, the way everything was freshly made from the best produce".
