Sticky Aubergines

I am a sucker for a nicely cooked aubergine but everytime I have attempted them myself I have ended up with a oily soggy mess.

After yet again buying another random aubergine in my shopping I decided enough was enough I was going to find something delicious that I could create with it and the sticky aubergine was found!

After looking through a LOT of online recipes I decided to combine a few together to make what I think is delicious.


1 Tablespoon Oil (I use rapeseed)
2 Aubergines cut into bitesite chunks
3 Tablespoons Honey (or Agarve if you want it vegan) 
3 Tablespoons Dark Soy Sauce 
(you can use light but I find dark makes it stickier) 
2 Garlic Cloves crushed
Salt and Pepper

You can add chilli flakes if you wish if you like things with a little heat

Makes 2 Portions


Heat the oil up in your pan and add all ingredients but the garlic, stir for 5 minutes then add the garlic and continue to cook for another 4-6 minutes until all the liquid is gone and the aubergine is cooked through.

I serve this simply with sticky rice but could be a side dish also.

Aubergines can be a little expensive but worth it
TASTE (1 Yuck - 5 Yum) -
Just served with some sticky rice is delicious
